Instructions
- Prep your ingredients: Cut the Yukon Gold potatoes into bite-sized chunks (about 1-inch pieces).
- Season the chicken: Pat chicken thighs dry and season with salt, pepper, and paprika.
- Sear the chicken: In a skillet over medium-high heat, melt 2 tablespoons of butter and add seasoned chicken. Cook for 5-7 minutes on each side until golden brown and cooked through.
- Crisp the potatoes: Add more butter to the same skillet, toss in the potatoes, and sauté until golden and crispy, about 10-12 minutes.
- Add the garlic: Once potatoes are nearly done, add minced garlic and sauté for another minute until fragrant.
- Create the cowboy butter sauce: Reduce heat to low, add the remaining butter, lemon juice, thyme, and parsley.
- Combine everything: Place chicken back into the skillet and spoon the sauce over it.
- Plate and serve: Remove from heat, give a gentle toss, and garnish with extra parsley if desired.
