- 1 pound ground beef (80/20 meat-to-fat ratio)
- 1 cup white rice (jasmine or basmati recommended)
- ½ cup unsalted butter
- 3 cloves garlic, minced
- 2 tablespoons chopped parsley
- 1 tablespoon chives
- Zest of 1 lemon
- Seasoning blend (paprika, garlic powder, onion powder, salt, and pepper)
- Toppings: sliced avocado, crispy bacon, shredded cheese, diced tomatoes
- Lime wedges
Instructions
- Cook 1 cup of rice according to package instructions; optional to use chicken broth instead of water.
- Melt ½ cup of unsalted butter in a small saucepan over medium heat.
- Add 3 minced garlic cloves, 2 tablespoons chopped parsley, and 1 tablespoon chives, sauté for about 2 minutes until fragrant.
- Stir in the zest of 1 lemon and season with salt and pepper.
- Cook 1 pound of ground beef in a large skillet over medium-high heat, breaking it apart with a spatula.
- Season with the seasoning blend and cook until browned, about 7-10 minutes.
- Reduce heat to low, stir in the cooked rice and half of the cowboy butter, mixing well.
- Spoon the beef-rice mixture into bowls and drizzle with the remaining cowboy butter.
- Top with sliced avocado, crispy bacon, shredded cheese, diced tomatoes, and squeeze lime over each bowl.
