Ingredients

  • 1 pound ground beef (80/20 meat-to-fat ratio)
  • 1 cup white rice (jasmine or basmati recommended)
  • ½ cup unsalted butter
  • 3 cloves garlic, minced
  • 2 tablespoons chopped parsley
  • 1 tablespoon chives
  • Zest of 1 lemon
  • Seasoning blend (paprika, garlic powder, onion powder, salt, and pepper)
  • Toppings: sliced avocado, crispy bacon, shredded cheese, diced tomatoes
  • Lime wedges

Instructions

  1. Cook 1 cup of rice according to package instructions; optional to use chicken broth instead of water.
  2. Melt ½ cup of unsalted butter in a small saucepan over medium heat.
  3. Add 3 minced garlic cloves, 2 tablespoons chopped parsley, and 1 tablespoon chives, sauté for about 2 minutes until fragrant.
  4. Stir in the zest of 1 lemon and season with salt and pepper.
  5. Cook 1 pound of ground beef in a large skillet over medium-high heat, breaking it apart with a spatula.
  6. Season with the seasoning blend and cook until browned, about 7-10 minutes.
  7. Reduce heat to low, stir in the cooked rice and half of the cowboy butter, mixing well.
  8. Spoon the beef-rice mixture into bowls and drizzle with the remaining cowboy butter.
  9. Top with sliced avocado, crispy bacon, shredded cheese, diced tomatoes, and squeeze lime over each bowl.

Notes
