Description

A heartwarming twist on classic mac and cheese, infused with spicy, tangy Buffalo chicken for the perfect comfort food.

Ingredients

Scale
  • 8 ounces elbow macaroni
  • 1 pound cooked chicken, shredded
  • ½ cup Buffalo sauce
  • 2 cups shredded sharp cheddar cheese
  • 1 cup cream cheese
  • ½ cup milk
  • ½ cup breadcrumbs
  • Salt and pepper to taste
  • 2 tablespoons chopped green onions (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the pasta in salted boiling water until al dente. Reserve a cup of pasta water before draining.
  3. Make the sauce by mixing shredded chicken, Buffalo sauce, cream cheese, and milk in a bowl.
  4. Mix in the cooked pasta, adding reserved pasta water if needed.
  5. Fold in the shredded cheddar cheese, saving some for the topping.
  6. Transfer the mixture to a greased 9×13-inch baking dish, spreading evenly.
  7. Create the topping by combining breadcrumbs, reserved cheddar, olive oil, and salt.
  8. Sprinkle the topping over the pasta mixture and bake for 25-30 minutes until golden brown and bubbly.
  9. Garnish with chopped green onions before serving.

Notes

For an extra crispy topping, broil for 2-3 minutes at the end, watching carefully to prevent burning.
