  • 2 large Sweet Potatoes, peeled and cubed
  • 2 cups Seasonal Vegetables, diced

  • 1 cup Cheese or Dairy Alternative
  • 2 tablespoons Olive Oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prep your ingredients by peeling and cubing the sweet potatoes and chopping seasonal veggies.
  3. Brown the beef in a skillet with olive oil, seasoning it while cooking.
  4. Combine sweet potatoes and veggies in a bowl with olive oil and spices.
