- 4 Whole Wheat Tortillas
- 1 can Black Beans, drained and rinsed
- 1 medium Sweet Potato, peeled and diced
- 1 Avocado, diced
- 1 cup Shredded Cheese (cheddar or Mexican blend)
- 1 tablespoon Olive Oil
- 1 teaspoon Cumin
- Salt and Pepper to taste
Instructions
- Prepare the sweet potato by peeling and dicing into cubes. Toss with salt, pepper, and cumin, then roast at 400°F (200°C) for 20-25 minutes.
- Sauté black beans in a skillet with olive oil, salt, pepper, and cumin for 3-5 minutes.
- Assemble the quesadilla with roasted sweet potatoes, black beans, diced avocado, and cheese on one half of a tortilla, then fold over.
- Cook each side in a skillet for 3-4 minutes until golden brown and cheese is melted.
- Serve hot, cut into wedges with salsa or a dollop of sour cream on the side.
