- 1 bell pepper, sliced

Instructions
- Prep your ingredients: Start by slicing the chicken, zucchinis, bell pepper, and onion.
- Marinate the chicken: In a bowl, toss the sliced chicken with 1 tablespoon of soy sauce, salt, and pepper. Let it sit for about 10-15 minutes.
- Heat the oil: In a large skillet or wok, heat 1 tablespoon of olive oil over medium-high heat.
- Cook the chicken: Add the marinated chicken to the skillet. Cook for about 5-7 minutes, stirring frequently.
- Add the veggies: Toss in the sliced onion, bell pepper, and zucchini. Stir-fry everything together for an additional 5-7 minutes.
- Mix in garlic and remaining soy sauce: Add the minced garlic and the remaining tablespoon of soy sauce. Cook for about another minute.
