Instructions

  1. Prep your zucchini: Grate the zucchini and squeeze out excess moisture.
  2. Preheat the oven to 350°F (175°C) and prepare your loaf pan.
  3. Mix the wet ingredients: Whisk together granulated sugar, brown sugar, and vegetable oil. Add eggs one at a time, mixing well. Stir in vanilla.
  4. Add the grated zucchini and fold into the wet mixture.
  5. Combine the dry ingredients in another bowl: flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
