Ingredients

  • 1 cup whole wheat flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups diced fresh peaches
  • ½ cup oats
  • ½ cup brown sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the muffin tin with paper liners or spray with non-stick cooking spray.
  3. Mix the dry ingredients in a bowl: all-purpose flour, whole wheat flour, sugar, baking powder, salt, and cinnamon.
  4. Combine the wet ingredients: melted butter, milk, eggs, and vanilla extract in another bowl.
  5. Pour the wet mixture into the dry ingredients and mix gently.
  6. Fold in diced peaches and oats, being careful not to overmix.
  7. Prepare the crumb topping by mixing brown sugar, oats, and cinnamon with a bit of melted butter.
  8. Fill the muffin tin with batter, about two-thirds full, and sprinkle with crumb topping.
  9. Bake for 18–20 minutes or until a toothpick comes out clean.
  10. Cool in the pan for 5 minutes before transferring to a wire rack.
