- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 cup sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- ½ cup unsalted butter, melted
- 1 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups diced fresh peaches
- ½ cup oats
- ½ cup brown sugar
- 1 teaspoon cinnamon
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the muffin tin with paper liners or spray with non-stick cooking spray.
- Mix the dry ingredients in a bowl: all-purpose flour, whole wheat flour, sugar, baking powder, salt, and cinnamon.
- Combine the wet ingredients: melted butter, milk, eggs, and vanilla extract in another bowl.
- Pour the wet mixture into the dry ingredients and mix gently.
- Fold in diced peaches and oats, being careful not to overmix.
- Prepare the crumb topping by mixing brown sugar, oats, and cinnamon with a bit of melted butter.
- Fill the muffin tin with batter, about two-thirds full, and sprinkle with crumb topping.
- Bake for 18–20 minutes or until a toothpick comes out clean.
- Cool in the pan for 5 minutes before transferring to a wire rack.
