- 1 cup oats or flour
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ginger
- 1/2 cup nut butter
- 1/4 cup honey or maple syrup
- 1/4 cup chocolate chips (optional)
- Pumpkin seeds (for topping)
Instructions
- Prep your ingredients by gathering all the ingredients and preheating the oven to 350°F (175°C) if baking.
- Mix the wet ingredients by combining the pumpkin purée, nut butter, and honey (or maple syrup) in a large mixing bowl.
- Incorporate the dry ingredients by adding oats (or flour), cinnamon, nutmeg, and ginger to the pumpkin mixture.
- Shape the energy bites by scooping out tablespoon-sized amounts of the mixture and rolling them into balls.
- Optional baking: Bake the bites for about 10-12 minutes until lightly golden.
- Cool and garnish by letting them cool and then sprinkling pumpkin seeds on top.
