Delicious, wholesome Pumpkin Energy Bites that are perfect for an afternoon pick-me-up or a post-workout snack.


Ingredients

  • 1 cup oats or flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/2 cup nut butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup chocolate chips (optional)
  • Pumpkin seeds (for topping)

Instructions

  1. Prep your ingredients by gathering all the ingredients and preheating the oven to 350°F (175°C) if baking.
  2. Mix the wet ingredients by combining the pumpkin purée, nut butter, and honey (or maple syrup) in a large mixing bowl.
  3. Incorporate the dry ingredients by adding oats (or flour), cinnamon, nutmeg, and ginger to the pumpkin mixture.
  4. Shape the energy bites by scooping out tablespoon-sized amounts of the mixture and rolling them into balls.
  5. Optional baking: Bake the bites for about 10-12 minutes until lightly golden.
  6. Cool and garnish by letting them cool and then sprinkling pumpkin seeds on top.
