- 2 ripe peaches
- 1 cup raspberries
- 1 ½ cups Greek yogurt
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- Mint leaves, for garnish
Instructions
- Prepare the peaches: Pit and slice the peaches. Blanch in boiling water for 30 seconds if desired.
- Make the raspberry sauce: Combine raspberries, honey, and a splash of water in a saucepan. Simmer for 5-7 minutes, then strain.
- Prepare the yogurt mixture: Combine Greek yogurt, vanilla extract, and honey in a bowl. Mix gently.
- Assemble the cups: Layer yogurt, peaches, and raspberry sauce in your cups.
- Garnish and chill: Top with mint leaves and refrigerate for at least 30 minutes.
Notes
Try using canned or frozen peaches when fresh ones are out of season. The dessert can be prepped ahead of time as well!
