- 1 cup walnuts
- 1/2 cup maple syrup
- 1 scoop vanilla protein powder
- 1/2 cup rolled oats
- 1/2 teaspoon cinnamon
- 1/4 cup chopped dried fruit (like cranberries or cherries)
- 1 cup Greek yogurt (plain or flavored)
Instructions
- Preheat your oven: Set it to 350°F (175°C).
- Prepare the walnuts: Chop your walnuts and toast them on a baking sheet for about 5-7 minutes.
- Mix your sticky ingredients: In a medium saucepan, combine the maple syrup and cinnamon over medium heat.
- Add the protein powder: Remove from heat and stir in the protein powder until smooth.
- Combine the dry ingredients: In a bowl, mix the rolled oats, walnuts, and dried fruit. Pour over the warm maple mixture.
- Shape the bark: Line an 8×8 inch baking dish with parchment paper and press the mixture down firmly.
- Bake it up: Let it bake for about 15-18 minutes until golden brown.
- Cool and cut: Allow it to cool for at least 30 minutes before cutting into bars.
- Serve with Greek yogurt: Add a dollop of Greek yogurt on top before serving.
Notes
For variation, try adding dark chocolate chips or shredded coconut. Store in an airtight container in the fridge for up to a week.
