Description

Delightful High-Protein Apple Cheesecake Jars that balance indulgence and nutrition with creamy layers of cheesecake and spiced apples.


Ingredients

Scale
  • 2 cups of Greek yogurt
  • 1 cup of cottage cheese
  • 1 teaspoon of vanilla extract
  • 23 medium apples, chopped
  • 1 tablespoon of cinnamon
  • 1/2 teaspoon of nutmeg
  • 2 tablespoons of honey or maple syrup
  • 1 cup of graham cracker crumbs (or alternative)
  • 4 tablespoons of melted butter
  • Optional toppings: chopped nuts, extra sliced apples, whipped cream

Instructions

  1. Combine the graham cracker crumbs and melted butter in a mixing bowl. Mix until evenly coated.
  2. Press about two tablespoons of the mixture into the bottom of each jar.
  3. Peel, core, and chop your apples into small cubes.
  4. Toss them with cinnamon, nutmeg, and honey or maple syrup, then let sit for 10 minutes.
  5. Sauté the apples in a skillet over medium heat for 5–7 minutes until softened.
  6. Combine Greek yogurt, cottage cheese, and vanilla extract in another bowl and blend until smooth.
  7. Spoon a layer of the cheesecake mixture into each jar, then add a layer of sautéed apples.
  8. Repeat the layers until jars are filled.
  9. Cover the jars and chill in the refrigerator for at least 2 hours.
  10. Serve with reserved apple mixture and toppings.

Notes

These jars can be prepped up to two days in advance. Feel free to customize toppings as desired.
