Ingredients

  • Zest of 1 lime
  • 2 tbsp lime juice
  • 1/2 cup granulated sugar for rolling

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare baking sheets with parchment paper.
  2. Combine flour, baking soda, and salt in a medium bowl.
  3. Cream the butter, granulated sugar, and powdered sugar until fluffy.
  4. Add egg and vanilla extract, mixing until combined.
  5. Mix in mint, lime zest, and lime juice.
  6. Combine wet and dry ingredients, mixing until just combined.
  7. Chill the dough for at least 30 minutes.
  8. Roll the cookies into balls and coat in granulated sugar.
  9. Bake for 10-12 minutes, or until the edges are lightly golden.
  10. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
