- Zest of 1 lime
- 2 tbsp lime juice
- 1/2 cup granulated sugar for rolling
Instructions
- Preheat your oven to 350°F (175°C) and prepare baking sheets with parchment paper.
- Combine flour, baking soda, and salt in a medium bowl.
- Cream the butter, granulated sugar, and powdered sugar until fluffy.
- Add egg and vanilla extract, mixing until combined.
- Mix in mint, lime zest, and lime juice.
- Combine wet and dry ingredients, mixing until just combined.
- Chill the dough for at least 30 minutes.
- Roll the cookies into balls and coat in granulated sugar.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
