Description

A delicious and healthy take on traditional pasta, this dish features zucchini noodles in a spicy garlic sauce that’s both quick and easy to prepare.


Ingredients

  • 4 medium zucchinis
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon red pepper flakes
  • 2 green onions, sliced
  • Salt and pepper to taste
  • Optional protein (chicken, shrimp, tofu)

Instructions

  1. Spiralize the zucchini to create noodles using a spiralizer, vegetable peeler, or mandoline slicer.
  2. Sauté the minced garlic in a skillet with sesame oil over medium heat for about 1 minute.
  3. Add the spiralized zucchini noodles to the skillet and cook for 2-3 minutes, tossing to coat.
  4. Pour in the soy sauce and sprinkle red pepper flakes, stirring to combine.
  5. Remove from heat, season with salt and pepper, and mix in the sliced green onions.
  6. Serve the zoodles in bowls, garnished with additional green onions and sesame seeds if desired.

Notes

Pat zoodles dry after spiralizing to avoid excess moisture. Optional protein can enhance the meal.
