- 1 packet active dry yeast
- 2 teaspoons ground cinnamon
- 1 teaspoon nutmeg
- 1 egg (or flax egg)
- 1 teaspoon vanilla extract
- ½ cup brown sugar
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare your baking dish by greasing a 9×13 inch dish or lining it with parchment paper.
- Mix the dry ingredients in a large bowl: sift together flour, cinnamon, nutmeg, and yeast.
- Combine the wet ingredients in a separate bowl: blend pumpkin, milk, melted butter, sugar, egg, and vanilla until smooth.
- Combine the wet ingredients with the dry ingredients, stirring until just combined.
- Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover, and let it rise in a warm place for 1 hour.
- Prepare the filling by mixing brown sugar, cinnamon, and salt in a bowl.
- Roll out the dough into a large rectangle, brush with melted butter, and sprinkle filling evenly.
- Roll the dough tightly into a log and cut into 12 pieces.
- Arrange the rolls in the baking dish and let them rise again for 30 minutes.
- Bake for 25-30 minutes or until golden brown.
- Prepare the glaze with powdered sugar, milk, and vanilla extract.
- Cool the rolls for 10 minutes before drizzling with glaze.
