Description

A delightful blend of pumpkin and cinnamon flavors in a warm, comforting bake, perfect for fall gatherings.

Ingredients

Scale
  • 1 cup pumpkin puree
  • 3 cups all-purpose flour (or oats)
  • ¾ cup granulated sugar (or coconut sugar)
  • ½ cup milk (or plant-based milk)
  • ¼ cup melted butter (or coconut oil)
  • 1 packet active dry yeast
  • 2 teaspoons ground cinnamon
  • 1 teaspoon nutmeg
  • 1 egg (or flax egg)
  • 1 teaspoon vanilla extract
  • ½ cup brown sugar
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare your baking dish by greasing a 9×13 inch dish or lining it with parchment paper.
  3. Mix the dry ingredients in a large bowl: sift together flour, cinnamon, nutmeg, and yeast.
  4. Combine the wet ingredients in a separate bowl: blend pumpkin, milk, melted butter, sugar, egg, and vanilla until smooth.
  5. Combine the wet ingredients with the dry ingredients, stirring until just combined.
  6. Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
  7. Place the dough in a greased bowl, cover, and let it rise in a warm place for 1 hour.
  8. Prepare the filling by mixing brown sugar, cinnamon, and salt in a bowl.
  9. Roll out the dough into a large rectangle, brush with melted butter, and sprinkle filling evenly.
  10. Roll the dough tightly into a log and cut into 12 pieces.
  11. Arrange the rolls in the baking dish and let them rise again for 30 minutes.
  12. Bake for 25-30 minutes or until golden brown.
  13. Prepare the glaze with powdered sugar, milk, and vanilla extract.
  14. Cool the rolls for 10 minutes before drizzling with glaze.

Notes

Drizzle with extra glaze, top with spiced whipped cream, or serve with fresh fruits for a delightful presentation.
