Ingredients

  • 1 cup pumpkin purée
  • 5 cups stale bread, cubed
  • 2 cups milk or dairy alternative
  • 4 large eggs
  • 1 cup brown sugar
  • 1 teaspoon pumpkin spice (or cinnamon and nutmeg)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • Optional: 1/2 cup nuts (pecans or walnuts), 1/2 cup chocolate chips, or dried cranberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your stale bread by cutting it into rustic cubes.
  3. Mix together eggs, pumpkin purée, milk, sugar, and vanilla extract in a large bowl. Add spices and salt.
  4. Combine the bread cubes with the custard until well-coated.
  5. Let it soak for about 15-30 minutes.
  6. Transfer the mixture to a greased casserole dish.
  7. Bake for 35-45 minutes until golden and set.
  8. Cool slightly before serving.

Notes

Serve warm with caramel sauce, vanilla ice cream, or whipped cream. Can be made ahead of time and stored in the fridge.
