A flavorful twist combining the heart of pepperoni pizza with the simplicity of a pasta salad, bursting with vibrant colors and flavors.


Ingredients

  • 8 ounces cooked pasta (any shape)
  • 1 cup pepperoni slices
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella cheese, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup bell pepper, diced
  • 1/4 cup red onion, diced
  • 1/2 cup Italian dressing
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and rinse under cold water.
  2. Chop the mozzarella, bell pepper, red onion, cherry tomatoes, and olives.
  3. Mix in a large bowl: pasta, pepperoni, tomatoes, mozzarella, olives, bell pepper, and red onion.
  4. Add the Italian dressing, Italian seasoning, salt, and pepper, then toss until combined.
  5. Chill in the fridge for at least 30 minutes before serving.
