Ingredients

- 1 cup lentils
- 2 cups vegetable broth
- 1 cup mushrooms, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 1 celery stalk, diced
- 1 teaspoon thyme
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Prep your veggies: Start by dicing the onion, carrots, and celery. Mince the garlic and slice the mushrooms.
- Sauté the aromatics: Heat the olive oil in a large pot over medium heat. Once hot, add the onion and cook until translucent, about 5 minutes. Stir in garlic and cook for another 60 seconds.
- Add the veggies: Add the carrots and celery to the pot. Stir and cook for about 5-7 minutes until they start to soften.
- Toss in the mushrooms: Add the sliced mushrooms and sauté for another 5-6 minutes.
- Spice it up: Stir in lentils, broth, thyme, cumin, salt, and pepper. Bring to a boil, reduce heat, and let it simmer covered for 25-30 minutes.
- Adjust seasoning: Taste and adjust flavors as needed.
- Finishing touches: Remove from heat and let it rest for a few minutes before serving.
Notes
This stew can be stored in the fridge for up to 4 days and tastes even better the next day. Feel free to add greens or swap out lentils for other beans.
