A hearty and comforting vegan stew made with lentils, mushrooms, and vegetables, perfect for cozy dinners.


Ingredients

  • 1 cup lentils
  • 2 cups vegetable broth
  • 1 cup mushrooms, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 1 celery stalk, diced
  • 1 teaspoon thyme
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Prep your veggies: Start by dicing the onion, carrots, and celery. Mince the garlic and slice the mushrooms.
  2. Sauté the aromatics: Heat the olive oil in a large pot over medium heat. Once hot, add the onion and cook until translucent, about 5 minutes. Stir in garlic and cook for another 60 seconds.
  3. Add the veggies: Add the carrots and celery to the pot. Stir and cook for about 5-7 minutes until they start to soften.
  4. Toss in the mushrooms: Add the sliced mushrooms and sauté for another 5-6 minutes.
  5. Spice it up: Stir in lentils, broth, thyme, cumin, salt, and pepper. Bring to a boil, reduce heat, and let it simmer covered for 25-30 minutes.
  6. Adjust seasoning: Taste and adjust flavors as needed.
  7. Finishing touches: Remove from heat and let it rest for a few minutes before serving.

Notes

This stew can be stored in the fridge for up to 4 days and tastes even better the next day. Feel free to add greens or swap out lentils for other beans.
