One Pot Sausage and Rice Casserole

A hearty one-pot meal combining flavorful sausage, rice, and vibrant vegetables, perfect for a comforting dinner.


Ingredients

  • 1 pound sausage (any kind)
  • 1 cup rice
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cups chicken broth
  • 1 can diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Heat about 1 tablespoon of olive oil in a large pot over medium heat. Once hot, add the diced onions and bell peppers. Sauté for 3-4 minutes until the onions become translucent and the peppers soften.
  2. Add the sausage—either slice it into rounds or crumble it into the pot. Cook for about 5-7 minutes until it is browned and fully cooked through.
  3. Stir in the garlic powder, paprika, salt, and pepper. Cook for another minute until fragrant.
  4. Pour in your rice and stir everything together for about a minute.
  5. Next, add in the diced tomatoes with their juices and broth. Stir everything until well combined.
  6. Bring the mixture to a gentle boil, then lower the heat to a simmer. Cover the pot and let it cook for about 20 minutes.
  7. Once the rice is cooked and most of the liquid is absorbed, remove it from the heat. Let it sit for another 5 minutes off the heat for extra fluffiness.

Notes

Top with fresh parsley or cilantro and serve with sour cream or lime for added flavor. Crusty bread pairs well for dipping.
