- 2 medium zucchinis, sliced
- 1 cup shredded cheese (mozzarella or cheddar)
- 1 cup diced tomatoes (canned or fresh)
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for greasing
Instructions
- Preheat your oven to 375°F (190°C).
- Prep your baking dish by coating it lightly with olive oil.
- Cook the chicken in a large skillet over medium heat, seasoning with salt, pepper, and half of the Italian seasoning.
- Add the minced garlic once the chicken is browned and cooked through (about 7-10 minutes).
- Combine the sliced zucchinis and diced tomatoes into the skillet and stir gently.
- Transfer the mixture into your prepared baking dish and sprinkle the shredded cheese on top.
- Bake for about 25-30 minutes until the cheese is bubbling and slightly golden.
- Let it sit for about 5 minutes before serving.
