Description

A comforting and cheesy zucchini bake that’s simple to prepare and perfect for any occasion.


Ingredients

  • 4 medium zucchinis, sliced
  • 2 cups shredded cheese (cheddar or mozzarella)
  • 1/2 cup grated Parmesan cheese
  • 2 eggs
  • 1/2 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • Olive oil for greasing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice your zucchinis into thin rounds—about 1/4-inch thick.
  3. In a medium mixing bowl, crack open the two eggs and whisk them well. Add in the heavy cream, garlic powder, onion powder, salt, and pepper. Whisk until fully combined.
  4. Mix in both the shredded cheese and grated Parmesan into the egg mixture.
  5. Add your sliced zucchinis to a large mixing bowl, then pour the cheesy egg mixture over them. Mix gently until the zucchini slices are thoroughly coated.
  6. Grease your favorite baking dish with olive oil.
  7. Transfer the cheesy zucchini mixture into the greased baking dish. Spread it out evenly.
  8. Bake for about 30 to 35 minutes, or until the top is golden and bubbly.
  9. Allow cooling for about 5 minutes before serving.

Notes

Feel free to experiment with different cheeses or add additional vegetables to the mix. This dish can also be prepared a day ahead and stored in the fridge before baking.
