- 4 medium zucchinis, sliced
- 2 cups shredded cheese (cheddar or mozzarella)
- 1/2 cup grated Parmesan cheese
- 2 eggs
- 1/2 cup heavy cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- Olive oil for greasing
Instructions
- Preheat your oven to 375°F (190°C).
- Slice your zucchinis into thin rounds—about 1/4-inch thick.
- In a medium mixing bowl, crack open the two eggs and whisk them well. Add in the heavy cream, garlic powder, onion powder, salt, and pepper. Whisk until fully combined.
- Mix in both the shredded cheese and grated Parmesan into the egg mixture.
- Add your sliced zucchinis to a large mixing bowl, then pour the cheesy egg mixture over them. Mix gently until the zucchini slices are thoroughly coated.
- Grease your favorite baking dish with olive oil.
- Transfer the cheesy zucchini mixture into the greased baking dish. Spread it out evenly.
- Bake for about 30 to 35 minutes, or until the top is golden and bubbly.
- Allow cooling for about 5 minutes before serving.
Notes
Feel free to experiment with different cheeses or add additional vegetables to the mix. This dish can also be prepared a day ahead and stored in the fridge before baking.
