Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 1/2 cup whole wheat flour
  • 1/2 cup rolled oats
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/4 cup protein powder
  • Optional: 1/3 cup dark chocolate chips
  • Optional: 1/3 cup chopped nuts
  • Optional: 1/3 cup dried fruit

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together pumpkin puree, Greek yogurt, and honey/maple syrup until smooth.
  3. Add flour, oats, protein powder, baking powder, cinnamon, nutmeg, and salt in a separate bowl and stir well.
  4. Combine the wet and dry mixtures, gently folding them together.
  5. Incorporate optional chocolate chips, nuts, or dried fruit if using.
  6. Prepare muffin tin by greasing or lining with paper liners and fill cups 3/4 full with batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Cool in the tin for 5 minutes before transferring to a wire rack.

Notes

These muffins can be frozen for up to three months. Feel free to adjust sweeteners or add various mix-ins for new flavors.
