Ingredients

- 1 cup pumpkin puree
- 1/2 cup Greek yogurt
- 1/4 cup honey or maple syrup
- 1/2 cup whole wheat flour
- 1/2 cup rolled oats
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/4 cup protein powder
- Optional: 1/3 cup dark chocolate chips
- Optional: 1/3 cup chopped nuts
- Optional: 1/3 cup dried fruit
Instructions
- Preheat your oven to 350°F (175°C).
- Mix together pumpkin puree, Greek yogurt, and honey/maple syrup until smooth.
- Add flour, oats, protein powder, baking powder, cinnamon, nutmeg, and salt in a separate bowl and stir well.
- Combine the wet and dry mixtures, gently folding them together.
- Incorporate optional chocolate chips, nuts, or dried fruit if using.
- Prepare muffin tin by greasing or lining with paper liners and fill cups 3/4 full with batter.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Cool in the tin for 5 minutes before transferring to a wire rack.
Notes
These muffins can be frozen for up to three months. Feel free to adjust sweeteners or add various mix-ins for new flavors.
