- 4 cups Chicken Broth
- Salt and Pepper, to taste
- 1 tbsp Pumpkin Spice
- 1/2 cup Dairy or Dairy Alternative
Instructions
- Prep yourself: Begin by chopping your veggies! Dice the onion, slice the carrots, and chop the celery into bite-sized pieces. Mince the garlic to release those amazing aromas.
- Sauté the aromatics: Heat a large pot over medium heat and drizzle in some olive oil. Toss in the onions first; let them sweat until translucent. Add the garlic and cook until fragrant.
- Cook the chicken: Add your diced chicken breast and sprinkle with salt and pepper. Cook until browned on all sides.
- Add veggies & spice: Toss in the carrots and celery with the pumpkin spice and stir everything together.
- Stir in pumpkin puree: Pour in the pumpkin puree and add the chicken broth. Bring to a gentle simmer for about 10 minutes.
- Blend away for creaminess: Use an immersion blender for a smoother texture, or leave it chunky if you prefer.
- Finish with cream: Add your dairy or non-dairy option. Stir well and adjust seasoning if necessary. Simmer for another 5 minutes.
- Serve and enjoy: Ladle your soup into bowls and top with fresh pepper or toasted pumpkin seeds.
