  • 1 can Pumpkin Puree
  • 2 Carrots, sliced
  • 2 stalks Celery, chopped
  • 1 Onion, diced
  • 3 cloves Garlic, minced
  • 4 cups Chicken Broth
  • Salt and Pepper, to taste
  • 1 tbsp Pumpkin Spice
  • 1/2 cup Dairy or Dairy Alternative

Instructions

  1. Prep yourself: Begin by chopping your veggies! Dice the onion, slice the carrots, and chop the celery into bite-sized pieces. Mince the garlic to release those amazing aromas.
  2. Sauté the aromatics: Heat a large pot over medium heat and drizzle in some olive oil. Toss in the onions first; let them sweat until translucent. Add the garlic and cook until fragrant.
  3. Cook the chicken: Add your diced chicken breast and sprinkle with salt and pepper. Cook until browned on all sides.
  4. Add veggies & spice: Toss in the carrots and celery with the pumpkin spice and stir everything together.
  5. Stir in pumpkin puree: Pour in the pumpkin puree and add the chicken broth. Bring to a gentle simmer for about 10 minutes.
  6. Blend away for creaminess: Use an immersion blender for a smoother texture, or leave it chunky if you prefer.
  7. Finish with cream: Add your dairy or non-dairy option. Stir well and adjust seasoning if necessary. Simmer for another 5 minutes.
  8. Serve and enjoy: Ladle your soup into bowls and top with fresh pepper or toasted pumpkin seeds.
