Ingredients

  • Flatbreads (2)
  • Chicken Breasts (2, boneless and skinless)
  • Blueberry BBQ Sauce (1 cup)
  • Red Onion (1/2, thinly sliced)
  • Crumbled Feta (1/2 cup)
  • Fresh Spinach (1 cup, chopped)
  • Olive Oil (1 tablespoon)
  • Salt and Pepper to taste
  • Fresh Blueberries (1/2 cup, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the chicken by seasoning with salt and pepper, then cook in olive oil over medium heat until cooked through.
  3. Make the blueberry BBQ sauce by heating the sauce with fresh blueberries for about 5 minutes.
  4. Slice the cooked chicken and toss it in the blueberry BBQ sauce.
  5. Assemble the flatbreads by layering sautéed spinach, the chicken mixture, red onions, and feta.
  6. Bake for 10-12 minutes until crispy.
  7. Garnish with fresh blueberries and serve.
