Ingredients
- Flatbreads (2)
- Chicken Breasts (2, boneless and skinless)
- Blueberry BBQ Sauce (1 cup)
- Red Onion (1/2, thinly sliced)
- Crumbled Feta (1/2 cup)
- Fresh Spinach (1 cup, chopped)
- Olive Oil (1 tablespoon)
- Salt and Pepper to taste
- Fresh Blueberries (1/2 cup, for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the chicken by seasoning with salt and pepper, then cook in olive oil over medium heat until cooked through.
- Make the blueberry BBQ sauce by heating the sauce with fresh blueberries for about 5 minutes.
- Slice the cooked chicken and toss it in the blueberry BBQ sauce.
- Assemble the flatbreads by layering sautéed spinach, the chicken mixture, red onions, and feta.
- Bake for 10-12 minutes until crispy.
- Garnish with fresh blueberries and serve.
