  • 1 cup cooked and crumbled chorizo or sausage

  • 1/2 cup diced bell peppers
  • 1/4 cup chopped onions
  • Salt and pepper to taste
  • Sour cream and salsa for serving (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare your fillings: In a large skillet, cook the chorizo or sausage over medium heat until browned, about 5-7 minutes.
  3. Whisk your eggs in a bowl, seasoning with salt and pepper. Add to skillet and cook until just set.
  4. Warm the tortillas: Wrap in aluminum foil and place in the oven for about 5 minutes.
