- 4 large eggs
- 1 cup cooked and crumbled chorizo or sausage
- 1 cup shredded cheese (cheddar or Mexican blend)

- 1/4 cup chopped onions
- Salt and pepper to taste
- Sour cream and salsa for serving (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare your fillings: In a large skillet, cook the chorizo or sausage over medium heat until browned, about 5-7 minutes.
- Whisk your eggs in a bowl, seasoning with salt and pepper. Add to skillet and cook until just set.
- Warm the tortillas: Wrap in aluminum foil and place in the oven for about 5 minutes.
- Assemble your tacos: Place tortillas in a greased baking dish, fill each with the egg and chorizo mixture, and top with cheese, bell peppers, and onions.
- Bake for 10-15 minutes, or until the cheese is melted and bubbly.
- Serve with sour cream, salsa, and fresh cilantro.
