Ingredients
Scale
- 2–3 Fresh Peaches, ripe
- 1 Baguette
- 1 cup Whipped Ricotta Cheese
- 2 tablespoons Honey
- A handful of Fresh Basil Leaves
- 1–2 tablespoons Olive Oil
- Salt and Pepper, to taste
Instructions
- Prep Your Peaches: Start by washing your peaches under cool water. Slice them in half, remove the pit, and slice into small pieces.
- Whip the Ricotta: In a large bowl, add ricotta cheese and a pinch of salt. Beat until light and fluffy, about 2-3 minutes, adding honey to taste.
- Prepare the Baguette: Preheat your oven to 400°F (200°C). Slice baguette into ½-inch thick pieces, drizzle with olive oil, sprinkle with salt, and bake for 8-10 minutes.
- Assemble the Bruschetta: Spread whipped ricotta on baguette slices, top with peaches, drizzle with honey, season with salt and pepper, and garnish with basil.
- Serve and Enjoy: Arrange on a platter and serve freshly made for the best experience!
Notes
You can add a splash of citrus zest into the whipped ricotta for extra flavor. This bruschetta pairs well with a charcuterie board and chilled wine.
