Ingredients

  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1 tablespoon olive oil
  • Black pepper (to taste)

Instructions

  1. Prep the ingredients: Wash and chop your spinach, dice the tomato, and slice the red onion.
  2. Assemble the quesadilla: Lay a tortilla flat, sprinkle mozzarella, spinach, tomatoes, feta, and red onion on one half.
  3. Season it up: Add black pepper over the fillings.
