Ingredients
2 chicken breasts, grilled or pan-seared, sliced
1 tbsp olive oil
Juice of 1 lemon
1 tsp dried oregano
Salt & pepper to taste
½ red onion, thinly sliced
¼ cup vinegar (white or red wine)
½ tsp sugar or keto sweetener
1 cucumber, shaved into ribbons
½ cup hummus
4–6 pita or low-carb wraps
Instructions
Marinate chicken in olive oil, lemon juice, oregano, salt, and pepper. Cook, then slice once cooled.
Pickle the onions: soak in vinegar and sweetener for 20+ minutes.
Prep cucumber ribbons with a veggie peeler.
Store ingredients separately in the fridge.
Assemble fresh wraps each day: spread hummus, layer chicken, onion, cucumber, and roll up.
