Ingredients
1 lb chicken breast or thighs, cooked and shredded
1 tbsp olive oil
1 small onion, diced
3 cloves garlic, minced
1 tsp Italian seasoning
½ tsp red pepper flakes (optional)
4 cups chicken broth
1 cup heavy cream
½ cup grated parmesan cheese
½ cup sun-dried tomatoes (in oil, drained and chopped)
2 cups fresh spinach
Salt and pepper to taste
Optional: fresh basil for garnish
Instructions
Sauté Base: Heat olive oil in a pot. Cook onion and garlic until fragrant and translucent.
Build Flavor: Stir in Italian seasoning, red pepper flakes, and sun-dried tomatoes. Cook 2 minutes.
Add Broth & Chicken: Pour in broth and add shredded chicken. Simmer for 10 minutes.
Creamy Finish: Lower heat, stir in heavy cream and parmesan. Simmer until thickened slightly.
Add Spinach: Toss in spinach and cook until wilted. Season with salt and pepper.
Serve Hot: Garnish with fresh basil and extra parmesan if desired.
