A sweet and savory side dish combining tender roasted carrots with crispy bacon and a drizzle of maple syrup.
Ingredients

- 2 lbs Carrots
- 6 slices Bacon
- 1/4 cup Maple Syrup
- 2 tbsp Olive Oil
- Salt and Pepper (to taste)
- Fresh Thyme (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and peel the carrots, slice them into even sticks (about 1/2 inch thick).
- Cook the bacon in a skillet over medium heat until crispy, about 7-10 minutes.
- In the skillet with the bacon drippings, add the carrot sticks, drizzle with olive oil and maple syrup, then season with salt and pepper. Toss to coat.
- Spread the carrots on a baking sheet in a single layer and roast for 25-30 minutes, turning halfway through.
- Once tender and caramelized, remove from the oven and crumble bacon over the top, then toss gently.
- Garnish with fresh thyme before serving.
Notes
Feel free to experiment with spices and alternative garnishes. Consider adding nuts on top for added crunch.
