Description

A sweet and savory side dish combining tender roasted carrots with crispy bacon and a drizzle of maple syrup.


Ingredients

  • 2 lbs Carrots
  • 6 slices Bacon
  • 1/4 cup Maple Syrup
  • 2 tbsp Olive Oil
  • Salt and Pepper (to taste)
  • Fresh Thyme (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the carrots, slice them into even sticks (about 1/2 inch thick).
  3. Cook the bacon in a skillet over medium heat until crispy, about 7-10 minutes.
  4. In the skillet with the bacon drippings, add the carrot sticks, drizzle with olive oil and maple syrup, then season with salt and pepper. Toss to coat.
  5. Spread the carrots on a baking sheet in a single layer and roast for 25-30 minutes, turning halfway through.
  6. Once tender and caramelized, remove from the oven and crumble bacon over the top, then toss gently.
  7. Garnish with fresh thyme before serving.

Notes

Feel free to experiment with spices and alternative garnishes. Consider adding nuts on top for added crunch.
