Ingredients

Scale
  • 2 cups pumpkin purée
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon allspice
  • 810 cups bread cubes (Challah or Brioche)
  • 2 cups milk or almond milk
  • 4 eggs
  • 1/2 cup maple syrup or brown sugar
  • 1 teaspoon vanilla extract
  • Whipped cream (for serving)
  • Nuts (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the bread by cutting it into 1-inch cubes.
  3. Whisk together the pumpkin purée, milk, eggs, maple syrup, vanilla extract, and spices until smooth.
  4. Combine the pumpkin mixture with the bread cubes, ensuring each piece is coated.
  5. Let the mixture soak covered for about 20 minutes.
  6. Grease a large baking dish with butter or cooking spray.
  7. Pour the mixture into the baking dish, optionally adding chocolate chips or nuts.
  8. Bake for 35-40 minutes until puffed and golden brown.
  9. Serve after cooling for 10 minutes, topping with whipped cream, syrup, or nuts.

Notes

Make sure to let the bread soak long enough to absorb the custard.
