- 2 cups Elbow Macaroni
- 3 cups Cheddar Cheese, shredded
- 2 cups Milk
- 2 Eggs
- 2 tablespoons Butter
- 6 slices Bacon, cooked and crumbled
- 1 cup Breadcrumbs
- 1 teaspoon Salt
- 1/2 teaspoon Pepper
- 1 teaspoon Paprika
- 1 teaspoon Garlic Powder
- 1/4 cup Green Onions or Chives, chopped (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the elbow macaroni in a large pot of salted boiling water for 7-8 minutes until al dente.
- Prepare the cheese sauce by melting 2 tablespoons of butter in a medium saucepan, then whisk in 2 tablespoons of flour and cook for 2-3 minutes.
- Gradually whisk in 2 cups of milk, stirring until thickened, about 5 minutes.
- Add 3 cups of shredded cheddar cheese to the sauce, stirring until melted and creamy.
- Combine the drained macaroni with the cheese sauce until fully coated.
- Add in the crumbled bacon, garlic powder, and seasoning, mixing well.
- Beat the eggs in a small bowl and fold into the macaroni and cheese mixture.
- Prepare a greased muffin tin or line with muffin liners, sprinkling the bottoms with breadcrumbs.
- Fill each muffin cup generously with the mac and cheese mixture.
- Top with additional cheese and breadcrumbs.
- Bake for 20-25 minutes until tops are golden and bubbly.
- Cool for 5 minutes in the tin before transferring to a wire rack.
