- 1 bunch Kale
- 2 tablespoons Lemon juice
- 1/3 cup Parmesan cheese, grated

Instructions
- Prepare the kale by washing it thoroughly and removing the stems.
- Massage the kale with a tablespoon of olive oil to tenderize.
- Make the dressing by whisking together lemon juice, remaining olive oil, salt, and pepper.
- In a large bowl, combine kale, croutons, and Parmesan cheese, and toss with the dressing.
- Taste and adjust seasoning before serving, and let it sit for 10 minutes to allow flavors to meld.
Notes
