A delicious and zesty meal prep recipe featuring marinated chicken, roasted potatoes, and fresh zucchini for a flavorful week of meals.


Ingredients

  • ¼ cup fresh lemon juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 teaspoons dried oregano
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 24 ounces boneless, skinless chicken breasts (4 (6-ounce) pieces)
  • 1.5 pounds yellow potatoes, cut into 1-inch pieces
  • 1 tablespoon olive oil (for potatoes)
  • 1 teaspoon garlic powder
  • 1 teaspoon salt (plus more to taste)
  • 1 teaspoon black pepper (plus more to taste)
  • 4 small zucchinis, sliced into 1-inch pieces

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine lemon juice, olive oil, minced garlic, dried oregano, paprika, salt, and black pepper in a bowl.
  3. Add the chicken breasts and coat them evenly. Cover and marinate for at least 15 minutes.
  4. Toss yellow potatoes with 1 tablespoon olive oil, garlic powder, salt, and black pepper in a mixing bowl.
  5. Lay seasoned potatoes on a baking sheet and roast for about 20 minutes.
  6. Add marinated chicken to the baking sheet and ensure there’s space between each piece.
  7. Bake for about 25-30 minutes until the chicken is cooked through (internal temperature of 165°F/74°C) and the potatoes are tender.
  8. Toss sliced zucchini with olive oil, salt, and pepper. Spread on the sheet and roast for the last 10 minutes.
  9. Once finished, let cool and divide into meal prep containers or serve immediately.

Notes

Store in airtight containers for meal prep convenience. For an extra flavor boost, drizzle with homemade tahini sauce or tzatziki before serving.
