Ingredients

  • 2 cups rotini pasta
  • 2 cups cooked chicken breast, chopped
  • 1 cup cashews
  • 1 cup bell peppers (red and yellow), chopped
  • 1/2 cup green onions, sliced
  • 1/2 cup dried cranberries
  • 1/2 cup mayonnaise
  • 1/4 cup rice vinegar
  • 2 tablespoons honey
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in a pot of salted boiling water until al dente. Drain and rinse under cold water.
  2. Prep the chicken by chopping or cooking until it reaches 165°F (75°C), then dice.
  3. Chop bell peppers and green onions.
  4. In a bowl, whisk together mayonnaise, rice vinegar, honey, salt, and pepper to make the dressing.
  5. In a large bowl, combine pasta, chicken, veggies, cashews, cranberries, and pour dressing over. Toss gently.
  6. Chill in the fridge for at least 30 minutes before serving.

Notes
