Description

A scrumptious and creamy chicken salad with jalapeños and crispy bacon, perfect for quick lunches and potlucks.


Ingredients

  • 2.5 lbs Cooked & Chopped Chicken Breast
  • 4 oz Cream Cheese (Softened)
  • 1 cup Mayonnaise
  • 1 tsp Garlic Powder
  • 1/2 tsp Chili Powder
  • Salt/Pepper (Pinch)
  • 4 slices Cooked Bacon (Chopped)
  • 1 large Jalapeño (Seeded & Chopped)
  • 1 cup Shredded Cheddar Cheese

Instructions

  1. Chop your cooked chicken into bite-sized pieces.
  2. Put softened cream cheese in a large mixing bowl and whisk until smooth.
  3. Stir in mayonnaise until well combined.
  4. Add garlic powder, chili powder, salt, and pepper and mix well.
  5. Toss in the prepared chicken and coat well.
  6. Fold in the chopped bacon and diced jalapeño gently.
  7. Sprinkle shredded cheddar cheese and mix once more.
  8. Cover and refrigerate for at least an hour to meld flavors.

Notes

Serve chilled on lettuce, in wraps, with crackers, or as a sandwich filling. Can be made a day ahead for better flavor.
