- 2 cups sushi rice
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1 cup cream cheese
- 1/2 cup cooked crab meat or imitation crab
- 1/2 cup cucumber, diced
- 1/2 cup avocado, diced
- Nori sheets, for decoration
- Soy sauce, for serving
Instructions
- Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. Combine the rice with 2½ cups of water in a saucepan, bring to a boil, cover, and simmer for about 20 minutes. Let it cool.
- Season the Rice: Mix rice vinegar, sugar, and salt in a small bowl, then gently fold this mixture into cooled rice.
- Prepare the Bundt Pan: Lightly oil or spray your bundt pan to prevent sticking.
- Layer the Ingredients: Place half of seasoned sushi rice in the bundt pan, pressing firmly. Layer cream cheese, crab meat, cucumber, and avocado. Top with remaining rice and press down.
- Set the Bundt Cake: Cover with plastic wrap and chill in the fridge for at least 30 minutes.
- Unmold the Cake: Run a knife around edges to loosen, flip onto a serving plate, and tap the pan if necessary.
- Decorate: Cut nori sheets into strips and place on top of the sushi bundt.
- Serve: Slice and drizzle soy sauce over, serving with extra sauce on the side.
Notes
Serve with a garnish of sesame seeds and microgreens for an elegant touch.
