Ingredients

  • 1 cup ripe peaches, chopped (fresh or canned)
  • 1/2 cup almond butter (or peanut butter)
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the dry ingredients: oats, baking powder, cinnamon, and salt in a bowl.
  3. Combine the wet ingredients: almond butter, honey (or maple syrup), vanilla extract, and peaches in a separate bowl.
  4. Combine the dry mixture with the wet mixture and fold them gently until just combined.
  5. Scoop generous spoonfuls of dough onto a parchment-lined baking sheet.
  6. Bake for 12-15 minutes until edges are golden.
  7. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
  8. Enjoy! Serve warm or with Greek yogurt.
