Ingredients

- 1 cup ripe peaches, chopped (fresh or canned)
- 1/2 cup almond butter (or peanut butter)
- 1/4 cup honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- Mix the dry ingredients: oats, baking powder, cinnamon, and salt in a bowl.
- Combine the wet ingredients: almond butter, honey (or maple syrup), vanilla extract, and peaches in a separate bowl.
- Combine the dry mixture with the wet mixture and fold them gently until just combined.
- Scoop generous spoonfuls of dough onto a parchment-lined baking sheet.
- Bake for 12-15 minutes until edges are golden.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
- Enjoy! Serve warm or with Greek yogurt.
