Ingredients

  • 2 pounds Red Potatoes
  • 6 slices Bacon
  • ¼ cup Apple Cider Vinegar
  • 2 tablespoons Dijon Mustard
  • 1 tablespoon Sugar
  • ¼ cup Bacon Drippings or Olive Oil
  • ½ cup Chicken or Vegetable Broth
  • 2 Green Onions (for garnish)

Instructions

  1. Prepare the potatoes by scrubbing and cutting them into quarters. Place them in a large pot covered with cold water, season with salt, and bring to a boil for about 15 minutes until fork-tender.
  2. Cook the bacon in a skillet over medium heat until crispy, about 6 to 8 minutes. Preserve the bacon grease in the skillet.
  3. Make the dressing by adding apple cider vinegar, Dijon mustard, and sugar to the bacon grease. Whisk together for about a minute, adjusting vinegar and sugar to taste.
  4. Combine the drained potatoes with the bacon and dressing, stirring to coat evenly, and cook together for another 2–3 minutes.
  5. Finishing touches include adding chopped green onions and giving it a gentle mix. Taste and adjust flavors as needed.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave.
