- 2 pounds Red Potatoes
- 6 slices Bacon
- ¼ cup Apple Cider Vinegar
- 2 tablespoons Dijon Mustard
- 1 tablespoon Sugar
- ¼ cup Bacon Drippings or Olive Oil
- ½ cup Chicken or Vegetable Broth
- 2 Green Onions (for garnish)
Instructions
- Prepare the potatoes by scrubbing and cutting them into quarters. Place them in a large pot covered with cold water, season with salt, and bring to a boil for about 15 minutes until fork-tender.
- Cook the bacon in a skillet over medium heat until crispy, about 6 to 8 minutes. Preserve the bacon grease in the skillet.
- Make the dressing by adding apple cider vinegar, Dijon mustard, and sugar to the bacon grease. Whisk together for about a minute, adjusting vinegar and sugar to taste.
- Combine the drained potatoes with the bacon and dressing, stirring to coat evenly, and cook together for another 2–3 minutes.
- Finishing touches include adding chopped green onions and giving it a gentle mix. Taste and adjust flavors as needed.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave.
