- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup Greek yogurt
- 1 cup powdered sugar
- 1 cup white chocolate, melted
- ½ cup brewed coffee, cooled
- 2 teaspoons vanilla extract
Instructions
- Prepare the crust: In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until crumbly and well-blended. Press this mixture firmly into the bottom of a 9-inch springform pan.
- Bake the crust: Preheat your oven to 350°F (175°C). Bake the crust for about 10 minutes until it’s set and lightly golden. Allow it to cool while preparing the filling.
- Blend the filling: In a large mixing bowl, use an electric mixer to beat the cream cheese until smooth and creamy. Add in the Greek yogurt, powdered sugar, and vanilla extract; mix until uniform.
- Infuse the goodness: Slowly pour in the melted white chocolate and cooled coffee, mixing until combined. Adjust sweetness if necessary.
- Pour and bake: Pour the filling over the cooled crust, smoothing it into an even layer. Bake for about 50-60 minutes until the edges are set but the center has a slight jiggle.
- Cool time: Turn off the oven and crack the door open. Once at room temperature, transfer to the fridge to chill for at least four hours, preferably overnight.
