Ingredients

  • 1/2 cup pumpkin puree
  • 1/4 cup honey or maple syrup
  • 1/2 cup nuts (such as almonds or walnuts)
  • 1/2 cup seeds (such as pumpkin seeds or sunflower seeds)
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup protein powder (optional)
  • 1/2 cup dried fruits (such as cranberries or raisins) (optional)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Mix the rolled oats, nuts, seeds, cinnamon, nutmeg, and salt in a large bowl.
  3. Combine the pumpkin puree, honey (or maple syrup), and protein powder (if using) in a separate bowl.
  4. Pour the wet mixture over the dry ingredients and stir until well-coated.
  5. Spread the granola mixture evenly on a lined baking sheet.
  6. Bake for about 25-30 minutes, stirring halfway through.
  7. Add dried fruits if using, after removing from the oven.
  8. Cool completely on the baking sheet before transferring to an airtight container.
