Ingredients

- 1 lb breakfast sausage (cooked and cooled)
- 2 cups protein pancake mix
- 1.5 cups water
- 1/4 cup sugar-free maple syrup
- 1 cup shredded cheddar cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the sausage by browning in a skillet until cooked through, then allow to cool.
- Mix the protein pancake mix with water in a large bowl until just combined.
- Stir in the cooked sausage and shredded cheddar cheese.
- Prepare a mini muffin tin by greasing it with non-stick spray.
- Fill each muffin cavity about 2/3 full with batter.
- Bake for 15-20 minutes, until golden brown.
- Cool for 5 minutes before removing and drizzle with maple syrup if desired.
