- 2 cups apples, diced
- 1 cup rolled oats
- 1/2 cup protein powder
- 1/2 cup almond flour
- 1/4 cup honey or maple syrup
- 1/2 cup butter or coconut oil, melted
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare an 8×8 inch baking dish with parchment paper.
- Mix the dry ingredients: rolled oats, almond flour, protein powder, salt, cinnamon, and nutmeg.
- Chop the apples into small pieces.
- Add the wet ingredients: melted coconut oil or butter with honey or maple syrup, followed by the diced apples.
- Combine the wet mixture into the dry ingredients, stirring until well combined.
- Transfer the batter into the prepared baking dish and spread evenly.
- Bake for 25-30 minutes until golden brown.
- Cool for 10-15 minutes in the baking dish before lifting out to cool completely on a wire rack.
Notes
Great served with nut butter, yogurt, or ice cream. You can also experiment with different fruits or spices.
