Description

These delicious muffins are packed with protein and flavor, making them a perfect on-the-go breakfast or snack.


Ingredients

  • 1 cup rolled oats
  • 1 cup cottage cheese
  • 2 eggs
  • 1/2 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 2 cups fresh or frozen blueberries
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, add the rolled oats, cottage cheese, eggs, honey or maple syrup, and vanilla extract. Mix until well incorporated.
  3. Sprinkle in the baking powder, baking soda, and salt. Fold gently to combine.
  4. Gently fold in the blueberries.
  5. Line a muffin tin with paper liners or grease with cooking spray.
  6. Spoon the batter into each muffin cup, filling them about 3/4 full.
  7. Pop the muffins in the oven and bake for 20-25 minutes.
  8. Let them cool in the tin for a few minutes before transferring to a wire rack.

Notes

These muffins can be frozen in an airtight container for up to 3 months. Enjoy with almond butter or Greek yogurt for extra nutrition.
