  • 1/2 teaspoon nutmeg
  • Maple Syrup (optional)

Instructions

  1. Mix the Dry Ingredients: In a large bowl, combine the flour (or oats), protein powder, baking powder, cinnamon, nutmeg, and a pinch of salt. Whisk until thoroughly combined.
  2. Combine the Wet Ingredients: In another bowl, mix the pumpkin purée, dairy (or its alternative), and eggs (or flax eggs). Whisk until smooth.
  3. Blend Dry and Wet: Gradually add the wet mixture into the dry ingredients. Stir gently until just combined.
  4. Preheat the Pan: Heat a nonstick skillet or griddle over medium heat.
  5. Cook the Pancakes: Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form and edges look set, about 2-3 minutes. Flip and cook another 2-3 minutes until golden brown.
