Ingredients

- 1 pound chicken breast, cut into cubes
- 1 cup pineapple chunks
- 1 bell pepper, cut into squares
- 1/4 cup pineapple juice
- 1/4 cup BBQ sauce
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- Skewers (wooden or metal)
Instructions
- Prep your skewers: Soak wooden skewers in water for at least 30 minutes.
- Marinate the chicken: Combine pineapple juice, BBQ sauce, soy sauce, and olive oil in a bowl. Add salt and pepper, then toss in chicken cubes and marinate for at least 30 minutes.
- Cut your veggies: Prepare bell pepper and pineapple chunks uniformly.
- Assemble the kabobs: Skewer chicken, pineapple, and bell pepper in a colorful pattern.
- Preheat your grill/oven: Heat grill to medium-high or preheat oven to 400°F (200°C).
- Grill or bake: Cook kabobs on the grill for 12-15 minutes or in the oven for 15-20 minutes, flipping halfway.
- Rest and serve: Let kabobs rest for a few minutes before serving.
Notes
Garnish with fresh cilantro or green onions, and serve with coconut rice or quinoa salad.
