Juicy chicken, sweet pineapple, and colorful bell peppers grilled to perfection.


Ingredients

  • 1 pound chicken breast, cut into cubes
  • 1 cup pineapple chunks
  • 1 bell pepper, cut into squares
  • 1/4 cup pineapple juice
  • 1/4 cup BBQ sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Skewers (wooden or metal)

Instructions

  1. Prep your skewers: Soak wooden skewers in water for at least 30 minutes.
  2. Marinate the chicken: Combine pineapple juice, BBQ sauce, soy sauce, and olive oil in a bowl. Add salt and pepper, then toss in chicken cubes and marinate for at least 30 minutes.
  3. Cut your veggies: Prepare bell pepper and pineapple chunks uniformly.
  4. Assemble the kabobs: Skewer chicken, pineapple, and bell pepper in a colorful pattern.
  5. Preheat your grill/oven: Heat grill to medium-high or preheat oven to 400°F (200°C).
  6. Grill or bake: Cook kabobs on the grill for 12-15 minutes or in the oven for 15-20 minutes, flipping halfway.
  7. Rest and serve: Let kabobs rest for a few minutes before serving.

Notes
