Description

This bowl is a celebration of flavor and nourishment. The first time I made it was for a picnic at the park—sunny skies, laughter in the air, and these vibrant bowls packed to-go. The sweet-spicy harissa chicken, cool tzatziki, creamy avocado, and tangy pickled onions hit every note. It’s meal prep made memorable.


Ingredients

Scale

1 lb chicken breast or thighs, cooked with 2 tbsp harissa paste + 1 tbsp honey

1 can corn (or 1½ cups fresh), grilled or pan-seared

1 cup chopped cucumber

½ red onion, pickled

2 cups baby spinach

1 avocado, halved and sliced

½ cup feta cheese, crumbled

34 tbsp hummus

34 tbsp tzatziki

Salt & pepper to taste

Olive oil & lemon juice for drizzle (optional)


Instructions

Cook chicken in a pan with harissa paste and honey until golden and cooked through. Slice when cooled.

In meal prep bowls, layer a bed of spinach.

Add corn, cucumber, chicken, avocado, and pickled onion.

Top with a scoop each of hummus and tzatziki.

Sprinkle with feta, and season with salt, pepper, and a light drizzle of olive oil or lemon juice if desired.

Store in airtight containers in the fridge for up to 4 days.
