Description

These Ham and Cheese Egg Cups are packed with flavor, protein, and are incredibly easy to make, perfect for breakfast or brunch.


Ingredients

  • 12 slices of ham
  • 12 large eggs
  • 1/2 cup mozzarella cheese
  • Salt, to taste
  • Pepper, to taste
  • Chopped green onions

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a muffin tin with cooking spray or butter.
  3. Line each muffin cup with a slice of ham, creating a bowl.
  4. Crack and whisk the 12 eggs in a mixing bowl, adding salt and pepper to taste.
  5. Pour the whisked eggs into each ham-lined cup, filling them three-quarters full.
  6. Sprinkle mozzarella cheese and chopped green onions over the eggs.
  7. Bake in the oven for 20-25 minutes or until the tops are golden and the eggs are set.
  8. Cool for 5 minutes, then gently run a knife around the edges and pop them out of the tin.

Notes

These egg cups can be customized with vegetables, different types of cheese, or spices. They freeze well for quick meals later.
