- 1 cup bell peppers (red, yellow, and green)
- 2 tablespoons tomato paste
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 scotch bonnet pepper
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- Fresh herbs (e.g., thyme or parsley)
Instructions
- Cook the spaghetti: Bring a large pot of salted water to a boil, cook pasta according to package instructions until al dente, drain, and toss with a splash of olive oil.
- Sauté the veggies: Heat olive oil in a skillet, add diced onions, and sauté for 3-4 minutes until translucent.
- Add the garlic and peppers: Toss in minced garlic and diced bell peppers, sauté for another 5 minutes.
- Brown the sausage: Push veggies aside, add sausage, and cook until browned, about 6-8 minutes.
- Mix in the tomato paste: Stir in tomato paste and let it cook for 2 minutes.
- Add the scotch bonnet: Carefully slice in half and add to the skillet.
- Combine with spaghetti: Add the drained spaghetti, toss everything together.
- Season and garnish: Season with salt, pepper, and herbs, and cook for an additional 2-3 minutes.
- Serve up: Transfer to a platter and garnish with more herbs and olive oil.
