Ingredients

Scale
  • 8 ounces whole wheat spaghetti
  • 1 pound pork sausage (or chicken/turkey sausage)
  • 1 cup bell peppers (red, yellow, and green)
  • 2 tablespoons tomato paste
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 scotch bonnet pepper
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Cook the spaghetti: Bring a large pot of salted water to a boil, cook pasta according to package instructions until al dente, drain, and toss with a splash of olive oil.
  2. Sauté the veggies: Heat olive oil in a skillet, add diced onions, and sauté for 3-4 minutes until translucent.
  3. Add the garlic and peppers: Toss in minced garlic and diced bell peppers, sauté for another 5 minutes.

  6. Add the scotch bonnet: Carefully slice in half and add to the skillet.
  7. Combine with spaghetti: Add the drained spaghetti, toss everything together.
  8. Season and garnish: Season with salt, pepper, and herbs, and cook for an additional 2-3 minutes.
  9. Serve up: Transfer to a platter and garnish with more herbs and olive oil.
