- 4 chicken thighs, bone-in, skin-on
- 1 cup fresh parsley, finely chopped
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 3 cloves garlic, minced
- 1 teaspoon red pepper flakes
- Salt and pepper to taste
Instructions
- Prep the chicken by patting dry and seasoning with salt and pepper.
- Make the chimichurri sauce by combining parsley, garlic, vinegar, olive oil, and red pepper flakes in a bowl.
- Preheat the grill to 400°F.
- Grill the chicken thighs skin-side down for 5-7 minutes until crispy, then flip and grill for another 5-7 minutes or until cooked through.
- Rest the chicken for 5 minutes and drizzle with chimichurri sauce before serving.
Notes
